    As advertised, the tour began with a trip to the local open air market. Here Claudia explained the traditional cooking vessels and bought some of the fresh ingredients for the class. Claudia teaches these classes from her beautiful home kitchen, with the help of several assistants. With great explanations of the history of the dishes, the differences in the regional cooking styles, as well as hands on practice in the techniques of Mexican cuisine, the class was fun, informative, and very instructive. Claudia is a wonderful chef and teacher. All of the food we prepared was absolutely delicious. I highly recommend her class and will certainly be repeating on our next visit to Cancun.
